Hearty Meatballs Made With Love

Eager to ensure my famous homemade meatballs would not lose their flavour with my recent diagnosis, I got to testing in the kitchen. These SIBO-approved meatballs are absolutely delicious, topped on courgette pasta or a homemade soup! Easy to make, easy bake & easy to eat.


These bad boys are grain-free, sugar-free, starch-free, SIBO-friendly, PHASE 1 R + SR


G2 Hearty Meatballs

Ingredients:

  • free-range minced beef 400g

  • salt + pepper

  • olive oil 1 T

  • almond milk 4 T

  • egg 1

  • rosemary herbs 1 Tsp

  • almond flour 2/3 cup

  • chopped parsley 1/4 cup

Directions:

  1. Preheat the oven to 180 C

  2. In a mixing bowl, add in the beef, generous pinch of salt + pepper, dried rosemary herbs and the tablespoon of olive oil

  3. Next, add in the egg and almond milk and use your hands to mix together the ingredients

  4. Once you've combined all of the wet ingredients, add in the almond flour. You may need to use your hands again or a spatula would work well at this point. The almond flour should soak up most of the wet ingredients so that you are left with an easily formable mixture.

  5. Roll a ball of the meat in your hands and place onto a cooking tray. Be sure to give each meatball space to cook— do not sit them right next to each other

  6. Bake for 18-25 minutes and voilà! They are ready to be served immediately and can be stored for leftovers.
