Zesty Fattoush - Hold The Pita

Prior to being diagnosed, I had been on a huge-lebanese kick. My favourite takeaway was The Cedar in West Hampstead... I still dream about their baby chicken dipped in garlic sauce.... I was quite desperate to keep a little lebanese flavour in my life and revised the traditional fattoush salad to a SIBO-friendly fattoush salad.


G2 Zesty Fattoush

Ingredients:

Salad: (single serving)

  • 1/4 cup diced cucumbers

  • 1/4 cup diced red capiscum

  • 1 small head Cos lettuce

  • 1/4 cup chopped parsley

  • 1 chopped and diced tomato (I removed the seeds)

  • *bit of chopped radish optional

Dressing: (shake together)

  • Generous drizzle of extra virgin olive oil

  • Salt & Pepper

  • 1-2 TSP ground Sumac spice

  • 1 lemon

  • 1 T water

Instructions:

Prep the salad and prepare the dressing separately. Once the dressing is created and shaken, pour over the salad and give the salad a nice mix till all the lettuce is coated in the delicious tangy, zesty dressing!

*Note: if you are wondering what that cheeky piece of bread is doing next to the salad bowl, it is a slice of GF (grain-free), DF, SF & Starch-Free banana bread. (recipe to come!)
